This is actually a lower fat recipe than a standard one.
6 tbsp real butter, chilled (margarine or other butter substitutes will
not work nearly as well)
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1/4 tsp baking soda
1 cup buttermilk
Combine and sift all dry ingredients. Using a pastry blender or 2 butter
knives, cut butter into mix until it resembles meal. Add buttermilk and
mix until dough is just together. Turn out onto a pastry sheet or floured
board and knead (with hands well floured, I might add), folding it in upon
itself so that all parts get some compression. When you feel the dough
begin to "push back" (and it won't take long) it's ready to roll
out, cut into biscuits and place into a pre-heated, 425 degree oven for 8-10
minutes. Add bacon, ham or sausage and you could hurt yourself.
