Green Bean
Casserole
By Rand E. Creitz
Does
anybody really need a recipe for this? I dunno, but this is one of the
ways we make it successfully.
4
cans green beans
1 can cr. of mushroom soup
1 can cr. of chicken soup
2 sm. cans water chestnuts
2 cups shredded cheese; cheddar, jack, Swiss, provolone or any combination
2 onions, made into rings and fried with egg batter recipe
This makes a very large dish that feeds a bunch of people, so cut it in half
for everyday use.
In a large saucepan fry 3-4 slices bacon, drain, reserve
drippings. Put washed, drained green beans into hot fat, tossing to coat
lightly and cooking until moisture begins to dry. Cover the beans with
cold water, place lid on pan and cook until beans are thoroughly done and
plump.
In a large crock place drained, cooked beans and soups, crumbling bacon into
the mixture and combine. Also add the water chestnuts. Pour into large baking
dish or roaster, top eith grated cheeses and fried onion rings and bake at 375
until cheese is bubbly and lightly browned.
Serves a bunch.
This stuff freezes very well, so go ahead and make a bunch up to freeze in
small servings.
Enjoy!
