White Bean Chili

 

 

1 pound of dried Northern Beans  (or 3 cans)

 

2 medium white onions

 

1 clove of garlic

 

1 tablesp of veg. oil

 

4 cups of diced chicken cooked

 

5 cups chicken broth

 

2 (41/2 oz) green chilies, chopped and drained

 

2 Tasp. Cumin

 

¼ teasp of cayenne peper

 

¼ teasp of dried oregano

 

¼ teasp of ground cloves

 

½ teasp  of chili powder

 

1/8 teasp of cardamom (optional)

 

Grated Jack Cheese

 

Sour Cream

 

 

 

Cook beans according to directions.  Saute onion and garlic in oil. Combine beans, onion mixture, chicken and next 9 ingredients in stockpot, bring to boil.  Simmer for 1 hour.  Add additional seasonings to taste.  Serve with cheese, sour cream, and salsa. Best prepared in advance.
