Remoulade
2 cups mayonnaise
2 tablespoons cornichons or sour gherkins, minced
2 tablespoons capers,
minced
1 garlic clove, minced
2 tablespoons chopped
parsley
1 tablespoon chopped
tarragon
1 teaspoon
1 anchovy, minced
Dash red pepper sauce
Mix together all
ingredients in a bowl. Refrigerate before serving.
Serve with cold seafood
and vegetables.
Yield: Approximately 1 cup
